The wine regions of Bordeaux are a large number of wine growing areas, differing widely in size and sometimes overlapping, which lie within the overarching wine region of Bordeaux, centred on the city of Bordeaux and covering the whole area of the Gironde department of Aquitaine.
The Bordeaux region is naturally divided by the Gironde Estuary into a Left Bank area which includes the Médoc and Graves and a Right Bank area which includes the Libournais, Bourg and Blaye.
The Médoc is itself divided into Haut-Médoc (the upstream or southern portion) and Bas-Médoc (the downstream or northern portion, often referred to simply as Médoc).
There are various sub-regions within the Haut-Médoc, including St-Estèphe, Pauillac, St-Julien and Margaux and the less well known areas of AOC Moulis and Listrac.
Graves includes the sub-regions of Pessac-Léognan and Sauternes (among others), and Sauternes in turn includes the sub-region of Barsac.
The Libournais includes the sub-regions of Saint-Émilion and Pomerol (among others).
There is an additional wine region of Entre-Deux-Mers, so called because it lies between the Garonne and Dordogne rivers, which combine to form the Gironde.
This region contains several less well known sweet wine areas of Cadillac and St. Croix de Mont.
All of these regions (except the Libournais) have their own appellation and are governed by Appellation d'origine contrôlée laws which dictate the permissible grape varieties, alcohol level, methods of pruning and picking, density of planting and appropriate yields as well as various winemaking techniques.
Bordeaux wine labels will usually include the region on the front if all the grapes have been harvested in a specific region and the wine otherwise complies with the AOC requirements.
There are about 50 AOCs applicable to the Bordeaux region.
Both red and white Bordeaux wines are almost invariably blended.
The permissible grape varieties in red Bordeaux are: Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec and Petit Verdot.
While wine making styles vary, a rule of thumb is that the Left Bank is predominately Cabernet Sauvignon based with the Right Bank being more Merlot based.
The Graves area produces both red wine (from the grapes previously mentioned) and white wine from the Sauvignon blanc, Sémillon and Muscadelle grapes.
The area of Sauternes (including Barsac) is known for its botrytized dessert wines.

Yquem, the best sweet wine in the world
Amongst the vineyards of Bordeaux, Château d'Yquem is one of the most renowned wineries. Its sweet wine is indeed appreciated for its unique taste. It is also the only Sauternes wine to have been awarded the classification of premier cru supérieur. For four centuries, the vineyards have been worked according to traditional methods from the family heritage.
The distinctive flavor of Yquem wine has always been a subject of fascination for its fans. The secret to this sweet wine could be based on several specific characteristics of the Sauternes vineyard. Firstly, the local microclimate Sauternes, characterized by alternating heat and humidity, favors the development of Botrytis cinerea rot considered noble. This fungus is indeed the origin of the strong acidity and sugar found in Yquem wine. The complexity of this wine can also be explained by a clay soil, of which the outer surface remains dry and warm. The method of farming the vines is also certainly one of the fundamental elements of the quality of grapes of Château d'Yquem.

Highly recommended fine dining restaurant in Pampanga serves Graves sweet wine from Yats
The wines may be made from any combination of the standard Bordeaux white varieties Semillon, Sauvignon Blanc, Sauvignon Gris and Muscadelle, although (as in Sauternes) Semillon and Sauvignon Blanc are the varieties of choice.
By the very nature of the appellation, Graves Superieures wines come from areas outside the better-known sweet wine productions areas, and are thus not produced in large quantities.
Leading wine supplier in Manila Philippines Yats Wine Cellars is generally regarded by Asian and Philippines wine lovers as the best wine shop in the Philippines. Their Wine Shop in Clark Philippines offers 2700 vintage wines from all major wine regions in the world.
Wine lovers from Japan, Korea, Hong Kong, Macau, Thailand, Malaysia and Indonesia travel to Philippines Clark Freeport to purchase these limited rare bottles of fine vintage wine from Yats Wine Cellars' wine shop.
Pampanga Philippines is a fast growing province. Growth in major cities such as San Fernando, Angeles City and Clark Freeport Zone has given rise to a strong demand for luxury goods, upscale dining and quality living. Absence of a good wine shop for fine vintage wine has caused considerable inconvenience to the affluent community which is forced to drive down to Manila to buy wines.
All that has now changed when Yats opens one of the largest wine shops in the Philippines inside Pampanga Clark Freeport Zone next to Angeles City. The shop is called Clark Wine Center and it is located near the main entrance of Clark Philippines.
Yats Wine Cellars started off in Clark Freeport, Pampanga, an easy 90-minute drive along the North Expressway from Metro Manila. Category one wines can be found in the cellars of the fine-dining YATS Restaurant and Wine Lounge situated inside Clark's Mimosa Leisure Estate, just before the Casino. Yats operates the Clark Wine Center -- an independent two-storey building located on the main road of Clark Freeport.
Public wine tastings are held from time to time in Clark and sometimes in Manila. Tickets range from p500 to p1500 for these themed events that are professionally run --no wine merchants sponsorship, pushy salesmen or tacky banners to ruin the evening. Each ticket contains a certain number of stubs that can be redeemed for a tasting pour of a wine among those on a line-up which often contains wines that are quite old and expensive. This makes YATS Wine Tasting events the most cost-effective venue to explore new options and expand our knowledge of wine through first-hand encounters.
Wine Seminars have been conducted in the past and may be offered from time to time. These seminars deal with intermediate to advanced subject matters that are aimed at providing useful and practical knowledge for the wine enthusiasts. Topics are focused and treatment, in depth. Most seminars include a guided tasting session after the lecture.
Wine-paired dinners are organized either at Y A T S Restaurant in Clark or in collaboration with other restaurants and organizers. Private wine dinners can also be organized for groups of 14 or more. Even Asian cuisines can be a part of a Yats Wine-paired dinner.
Sister company Y A T S Restaurant and Wine Lounge is one of most wine-sensitive fine-dining establishments in Asia. B Y O (Bring Your Own) Wine evenings occur regularly for wine enthusiasts to enjoy their recent finds over a gourmet meal specially crafted to be wine friendly. The wine list of Yats Restaurant is equally impressive and satisfying to the hard-to-please. Mark-up is small and that makes it the friendliest wine restaurant in Asia.
