ITA: Il Molinaccio è il frutto dell’accurato restauro di un mulino storico, risalente al sedicesimo secolo, presso l'antica cittadina Medicea di Montepulciano, già rappresentato nelle antiche mappe catastali con il nome Molinaccio. Oggi questo antico mulino riapre le porte come dimora di lusso, dove poter trascorrere piacevoli giornate immersi nell'assoluta tranquillità del curatissimo giardino, contornato da secolari querce, da un frutteto e dalla vigna. Olio extravergine di oliva - EVO OIL

L'olio extra vergine prodotto dalle olive coltivate in azienda è intenso, aromatico e robusto: con note di testa carciofate, piccante e con retrogusto amaro. Le 2500 piante di olivo sono coltivate sugli antichi terrazzi a Montaio ed al Morellino, ad un'altitudine media di 420 metri. Le varietà delle piante sono: moraiolo, frantoio e correggiolo, leccino, pendolino. La coltivazione viene effettuata secondo i sistemi di lotta biologica. Le olive sono raccolte già dalla fine di ottobre e durante tutto il mese di novembre. Il metodo di raccolta è manuale: si fanno cadere le olive su reti distese sotto gli alberi. Le olive in attesa della frangitura vengono conservate in casse di plastica immagazzinate in locali ventilati, puliti e privi di odori. Per ottenere il massimo della qualità entro pochi giorni dalla raccolta vengono frante, la frangitura meccanica a ciclo continuo integrale a bassa temperatura (max 27 ° C) evita di alterare le caratteristiche organolettiche e gli aromi. Ogni tre giorni al frantoio, le olive vengono pesate, lavate e schiacciate; la pasta ottenuta, viene passata attraverso 3 centrifughe, che estraggono l'olio. L'olio in azienda è immagazzinato in contenitori d'acciaio inox. Viene confezionato per la vendita in bottiglie di vetro scuro poiché l'olio teme la luce.

The extra virgin oil produced at our farm is robust and aromatic: with a strong artichoke flavor, slightly piquant and bitter; a classic Tuscan extra virgine olive Oil. 2200 olive trees grown on ancient terraces on two hills: Montaio and Morellino at an average altitude of 410 metres. The olive varieties are: Moraiolo, Frantoio and Correggiolo, Leccino, Pendolino. We cultivate and produce organically. We use less phytomedicine, and organic fertilizers, to protect the environment and for a better quality of the products. The fruit is picked during the month of November, although sometimes we start earlier. We harvest the olives by hand, with the fruit being combed down onto nets spread beneath the trees. From the nets the olives go straight into plastic crates, which are weighed and stocked ready for transport to the extraction plant. The fruit is stored in rooms, dried and aerated. Every 3 days during the harvest the crates full of olives are transported to the mill, the extraction plant, where the fruit is weighed, washed and crushed. The resulting paste is then centrifuged in a continuous system at an operating low temperature (27° C). After the 3rd centrifuge the extra virgin olive oil is ready. The extravirgin olive oil is then stored in stainless steel containers. Subsequently it is bottled in dark glass.
