New mexican food is a cuisine that has roots stretching back to before we even began to record those roots. People have been living, and eating, in new mexico for many thousands of years, and the origins of the land's culture stretches back to before the founding of the roman empire.
More tangibly, dishes eaten today by New mexicans include Pasole, or Pazole, a dish of simmered hominy corn with pork, which goes back to Aztec traditions, where prisoners would first be sacrificed to the gods by the removal of their heart, and then the remaining meat would be diced up and simmered with hominy. It's an interesting thing to think about, given ancient American beliefs that the first men were made from cornmeal by the gods, this dish really was a symbolic one, the beginning and the present. Barbaric to be sure, but beautiful in its own way.
These days it's made with pork, don't worry.
But stories like that are what really drew me to New mexico, because that's something all food has in common really, if food is worth eating, then there's a story behind it. And those stories turn the food itself into a destination.
At the end of the day, this was just a video to show a couple of the true new mexican specialities, the rest of it was really just me eating some food. Hope you enjoy.

El Santuario de Chimayó is a National Historic Landmark in Chimayó, New Mexico. It is one of the most popular modern-day pilgrimage centers in the United States. It is also popular for its magical healing soil. Located in a prayer room next to the sanctuary, a round hole filled with this soil that is said to have a magical power to heal.
The Santo Niño Chapel is just a short walk from el Santuario. The chapel is built in the traditional northern New Mexico style and is filled with beautiful artwork.
